BEEF BRISKET
Ingredients:
| 7 1/2 lbs. | Beef brisket, closely trimmed |
| 2 tbsp. | Salt |
| 1 tbsp. | Pepper |
| 12 oz. | Onion, minced |
| 2 1/4 cups | CATTLEMEN'S® Texas Smoky Barbecue Sauce |
Procedures:
1. Season brisket with salt, pepper and onion.
2. Place in smoker, fat-side up. Smoke 2 1/2 hours at 225°F.
3. Remove from smoker; place in aluminum foil, fat-side down.
4. Pour barbecue sauce over all.
5. Seal foil and place on rack in pan. Bake 3 hours at 250°F.
6. Let stand 10 minutes before slicing.
