BBQ CHICKEN FOCACCIA SANDWICH
Ingredients:
| 12 each | Chicken breast, 6 oz. |
| 2 1/4 cups | CATTLEMEN'S® Kansas City Classic Barbecue Sauce |
| 12 each | Rosemary focaccia square, 6 |
| 1/2 cup | Garlic butter, softened |
| 1 1/2 cups | Caramelized onions |
| 36 pieces | Roasted red peppers |
| 24 slices | Sliced havarti cheese |
Procedures:
1. To make each sandwich grill a chicken breast and baste with 2 tbsp. BBQ Sauce during the last few minutes of cooking, taking care not to burn sauce. Spread cut sides of focaccia square with 1 tsp. garlic butter per side. Toast on grill. Lay chicken breast on heel of focaccia and top with 2 tbsp. onion, 3 pieces red peppers and 2 slices of cheese. Place under broiler or in hot oven to melt cheese. Spread crown of focaccia with 1 tbsp. BBQ Sauce and serve open faced.
