Texas BBQ is synonymous with beef brisket and sausage. The emphasis is on the flavor of the meat itself and the subtle smoke flavor from local hickory, post oak or mesquite. The tangy tomato-based sauce is blended with cayenne and other spices and added at the table.

Ingredients
2 tsp. Chile powder
4 Tbsp. Brown sugar
2 tsp. Black pepper
2 tsp. Cumin
1 tsp. Garlic powder
2 Tbsp. Flour
5 lbs. Brisket, flat cut
3 Tbsp. Oil
3 cups CATTLEMEN'S® Texas Smoky™ Barbecue Sauce
2 cups Water
3 ¾ lbs. Prepared mashed potatoes
36 each Batter fried onion rings
1. To make the spice rub combine chile powder, brown .....sugar, pepper, cumin, garlic powder and flour. Reserve until needed.
2. Coat each side of brisket with 4 Tbsp. spice rub. Heat oil.in a large skillet with a tight fitting lid. Brown brisket on both sides until golden. Add 1 cup Cattlemen's and water.to skillet. Cover and put in 250°F. oven. Cook for 3 hours, or until tender. Remove from liquid, and place on hot grill and turn and baste with ½ cup Cattlemen's, taking.care not to burn sauce.
3. For each serving thinly slice 4 oz. brisket. Mound 5 oz. mashed potatoes in center of plate, lay sliced brisket over potatoes and drizzle with 2 Tbsp. Cattlemen's. Top with 3 onion rings.
Texas Style BBQ Sausage Pizza
Ingredients
3 cups CATTLEMEN'S® Texas Smoky™ Barbecue Sauce
12 each Pizza dough rounds, 12"
6 cups Shredded Mozzerella cheese
3 cups Shredded cheddar cheese
18 cups Sausage, thinly sliced
To make each pizza spread ¼ cup Cattlemen's over .....dough and sprinkle with ¼ cup of each cheese. Top with .....1½ cups sliced sausage and bake in a hot oven until .....dough is crispy and golden.
BBQ Enchiladas
Ingredients
4Tbsp. Oil
2 cups Onion, chopped
4¼cups CATTLEMEN'S® Texas Smoky™ Barbecue Sauce
4¼cups Salsa
2 lbs. Cooked shredded beef
2Tbsp. Cilantro, chopped
24 each Corn tortillas, 6"
3cups Cheddar cheese, shredded
1. Heat oil and sauté onions until golden. Add shredded beef and brown. Drain fat.
2. Combine Cattlemen's and salsa. Add 2½ cups to the beef mixture and stir in cilantro, hold beef mixture hot for service. Reserve remaining sauce for service.
3. For each serving heat 2 tortillas. Spoon ¼ cup beef filling in the center of each tortilla, roll tightly and place in an individual oiled oven-proof casserole. Cover tortillas with ½ cup reserved sauce and top with ¼ cup cheese. Bake in very hot oven until cheese melts.

Brush brisket and sausage with a thin coating of CATTLEMEN'S® Texas Smoky™ Barbecue Sauce. Line a plate with a piece of butcher paper. Plate 2 - 3 ounces of sliced brisket (approx. 1/4" slices) and 2 - 3 ounces of sausage (diagonally sliced in thirds). Add slices of avocado, mild cheddar cheese, onions, and jalapeños and a piece of garlic bread. Serve with a ramekin of extra sauce or place bottles of sauce on the table. Makes one plate.
