Mississippi BBQ includes pork shoulder and whole hog slow-cooked in a smoker or an open pit filled with hickory wood to provide a smooth smoky flavor. Mississippians aren't the only ones who love the combination of smoky and sweet in their BBQ sauces, but some of these BBQ sauces, which include honey and garlic, have become local favorites.

Sweet & Smoky Honey BBQ Chicken Salad Grilled Pork Chop with Honey BBQ Caramelized OnionSweet & Smoky Honey BBQ Chicken Salad
Ingredients
2 cups mixed baby salad greens
¼cup cucumber, thinly sliced
1 hard-cooked egg, sliced
½ cup diced tomato
¼cup Parmesan cheese, grated
¼cup dressing
1 cup barbecue chicken breast, chopped or pulled Red onion rings, thinly sliced
Homemade croutons
Crumbled crisp bacon
Dressing
2 cups CATTLEMEN'S® Mississippi Honey™ BBQ
2-¼cups vegetable oil
2-¼cups apple cider vinegar
2-¼cups white sugar
½ cup paprika
1/8 cup kosher salt
1/8 cup onion powder
Toss greens, cucumber, egg, tomato, Parmesan cheese, and dressing in a large bowl. Plate the salad and top with chicken, onion, croutons, and bacon.
Dressing: Stir Cattlemen's, oil, and vinegar together until well combined. In a separate bowl, sift dry ingredients. Whisk the dry ingredients into the sauce mixture until well combined. Makes dressing for 30 salads.
Grilled Pork Chop with Honey BBQ Caramelized Onion
Ingredients
12 Cups Thinly sliced onions
¾Cup Butter
1 1/8 cups CATTLEMEN'S® Mississippi Honey™ BBQ Barbecue Sauce
12 each Center cut bone in pork chops
1. Cook onions in butter over low heat until golden brown and caramelized, about 40-45 minutes. Add Cattlemen's and hold hot or refrigerate and reheat for service.
2. For each serving grill 1 pork chop to desired doneness and serve with ¼cup of warm onions.
