Memphis
Memphis is known for both dry-rubbed ribs and sauced ribs. Ribs are finished with a light coating of a sweet tomato-based sauce with a hint of spice that seeps right into the meat or served with sauce on the side. Rub ingredients vary but often include sugar, garlic, paprika, onions, cumin, and other spices.

Ingredients
2 oz. Sliced brisket
2 oz. Pulled pork
2 oz. Pulled chicken
2" sandwich rolls
Dry rub, your favorite CATTLEMEN'S® Memphis Sweet™ Barbecue Sauce to taste
Coleslaw to taste
Make individual sandwiches with 2 ounces of each meat sprinkled with dry rub and drizzled with Cattlemen's. Plate one of each kind of sandwich garnished with vinegar-based confetti coleslaw made with purple cabbage and finely chopped yellow peppers. Rim the plate with dry rub. Makes one plate.
Ultimate Sweet BBQ Pizza
Ingredients
1 cup Pulled Pork
1½ cups CATTLEMEN'S® Memphis Sweet™ Barbecue Sauce
1 Pizza dough, 12"
1½ cups Shredded mozzeralla cheese
1 Tbsp. Canned green chilies
1 Tbsp. Red onion, thinly sliced
1 Tbsp. Scallions, chopped
as needed Sour cream
1. Combine chicken and ¼ cup Cattlemen's .
2. Spread remaining ¼ cup sauce over pizza crust. Top with 1 cup cheese, chicken, chilies, red onion and remaining ½ cup cheese.
3. Bake until crust is crisp and cheese has melted. Top with scallions.
Tip: For extra flavor, drizzle on sour cream or extra Cattlemen's.
Sweet Honey Porter Pork Tenderloin Sandwich
Ingredients
12 oz. Honey porter ale
1¾ cup CATTLEMEN'S® Memphis Sweet™ Barbecue Sauce, divided
3 Pork tenderloins, 14-16 oz.
12 Sesame Kaiser rolls, split
36 Butter pickle chips
24 Tomato slices
12 Red onion slices
24 Lettuce leaves
1. To make the sauce for the sandwich, reduce ale to ¼ cup and mix with 1½ cups Cattlemen's.
2. Sear tenderloins on both sides and brush each with 2 Tbsp. Cattlemen's. Roast to desired internal temperature. Let cool and thinly slice.
3. For each sandwich, heat 3 oz. sliced pork with 3 Tbsp. sandwich sauce, place on heel of roll and top with 3 pickle chips, 2 slices tomato, 1 slice onion and 2 lettuce leaves. Cover with crown and slice in half.
Tip: May substitute any dark beer for honey porter
Pulled Pork Stack
Ingredients
12 cups Cooked, pulled pork meat
6 cups CATTLEMEN'S® Memphis Sweet™ Barbecue Sauce
6 cups Coleslaw mix, shredded
¼ cup Red pepper, minced
¼ cup Green pepper, minced
2 Tbsp. Sliced scallion
3 Tbsp. White vinegar
to taste Salt and pepper
12 each Seeded soft rolls, split
1. Combine pork and BBQ sauce; hold refrigerated until ready for service.
2. Combine slaw mix, red pepper, green pepper, scallion, vinegar, salt and pepper. Refrigerate until service.
3. To make each sandwich, heat 1 cup pork mixture and place on heel of roll. Top pork with ¼ cup coleslaw.
