Kansas City ribs are served wet with a rich, tomato-based sauce that's smooth, sweet and tangy with just the right amount of spice. Due to the Kansas City stockyards, brisket is also a barbecue favorite here. Burnt ends, the edge pieces of brisket that absorb a lot of flavor from the rub and smoke, are also a local delicacy.

Peachy Glazed BBQ Pork Ribs

Serving size: 1 Chop Yield: 12

Ingredients

2 ½ cups CATTLEMEN'S® Kansas City Classic™ Barbecue Sauce
2 ½ cups Peach preserves
12 each Center cut bone in pork chops, 8 oz.
to taste Salt and pepper

1. Combine Cattlemen's and peach preserves and simmer for 10 minutes. Reserve 3 cups for sauce, use remaining 2 cups for basting.

2. For each serving season 1 pork chop with salt and pepper and grill to desired doneness basting with BBQ sauce during the final 5 minutes of cooking, taking care not to burn sauce. Serve with ¼ cup warm sauce on the side.

KC Golden Ale BBQ Roasted Chicken

Serving size: ½ Chicken Yield: Yield: 12

Ingredients

7 cups Dark beer
3 ½ cups CATTLEMEN'S® Kansas City Classic™ Barbecue Sauce
12 each Chicken halves
½ cup Dry rub, your favorite

1. Reduce beer to 3 ½ cups and combine with Cattlemen's. Reserve 3 cups for sauce on the side, remaining 4 cups of sauce are for basting.

2. Wash and pat dry halves. Rub 2 tsp. of dry rub seasoning on each bird. Place in 500°F. oven for 25 minutes. .....Reduce heat to 350°F. and begin basting birds every 5-10 .....minutes until an internal temperature of 165°F. is reached.

Bar-B-Cuban

Serving size: 1 sandwich

Ingredients

2 slices airy, thick French bread
4 oz. barbecue pork, sliced
2 slices ham
2 slices Swiss cheese

DRESSING (yields 24 sandwiches)
1 cup CATTLEMEN'S® Kansas City Classic™ Barbecue Sauce
1 cup buttermilk ranch dressing
1 cup French's® Dijon mustard
1 tbsp. FRANK'S® REDHOT® Sauce

Brush dressing on one slice of bread and layer with pork, ham, and cheese. Grill on a panini press until cheese melts and the outside is golden brown.

Sweet & Smoky Chicken Salad

Serving size: 1 cup Yield: 12 servings

Ingredients

8 cups Chicken, diced, smoked
2 cups Red apples, diced
1 cup Celery, diced
¼ cup Walnuts, chopped, toasted
3 Tbsp. Scallions, chopped
3 Tbsp. Parsley, chopped
¾ cup Mayonnaise
½ cup CATTLEMEN'S® Kansas City Classic™ Barbecue Sauce
to taste Cracked black pepper

1. Combine chicken, apples, celery, walnuts, scallions, parsley, mayonnaise, Cattlemen's and cracked black pepper. Refrigerate until needed.

2. Serve on a bed of greens or use as a sandwich filling.
